OK. I'll explain it for you. Muslims follow Islam - a set a ideas and beliefs. If you believe in free speech, then ideas are open to discussion, debate and ridicule. It's perfectly fine to take the piss out of their medieval, desert mythology. The term Jew can be used to describe both an ethnicity as well as people who follow the religion of Judaism. I've worked with plenty of Israelis who were confirmed atheists, ridiculed their religious colleagues but were still proud to call themselves Jewish. Now if you're taking the piss out of the tenets of Judaism, that's perfectly fine. However, if you're taking the piss out of people because they're ethnically Jewish, that's good, old-fashioned racism my PLO-supporting friend. In what way is that contradictory?
