Though it's true that they see all animals as sacred(at least as defined above), cows are singled out, as they're considered more holy than any other animal.

According to Hindu's, they're not singled out to be more sacred. It's very debatable if "holy" is a description they'd use either, but they are appreciated and respected more in most parts.
To be fair, DMD, I have some good friends who are of the Hindu faith (they would call it a belief) and would agree with you all-heartedly if a were quite a few centuries ago, bit it has evolved and the cow is now considered sacred to them. I don't know if you have friends who you can discuss it with but Hinduism throws up some startling stories that can make you both laugh and cry in equal measure. Semantics aside there is a tad of truth in what you say, enjoy your night.
