You would for two reasons. First, I've never backed out of a bet in my life. Second, it's very easy to sort out. We can both place £1000 in an escrow account or with a solicitor of your choice. Failing that, you nominate a bookie of your choice and we both place £1000 with him. After the bet has been won/lost he'll take his cut and pay out the rest to the winner.
