I know it's not novel Roller but occasionally I book my wife in for a spa weekend, treating her to a couple of massages and beauty treatments. Don't know a woman that wouldn't enjoy that.
As a slight deviant you could both travel on a weekend/night away and still book her in for treatments allowing you to have a few drinks or watch a match while she's getting her treatments.
Simple but both work for me every time.

Salcombe is probably too far to avoid spending half the weekend in the car, your other suggestions is definitely too far!

As opposed to the snowy Norfolk we saw at Easter!

Sounds like a car service the way you describe it Nuts!

What was her dream destination Roller? Has she been there. If not, do whatever it takes to make it happen.

A ring identical/similar but different to her original wedding ring.
A special trip/long weekend to somewhere that means something to you two....but no one else would understand. So not Paris/Rome but Woolworths in Ealing or Shepherd Bush Empire

At that special place you (re)-give her the ring....and then whisk her off to cocktails at the Shard and then dinner at the Le Manoir aux Quat'Saisons, or somewhere like that (sorry that is Col not you)....and a romantic hotel in the countryside

Regardless of where you go or what you get up to, if you haven't already done this in the past, make a photo book for her, dead easy to do online and a very special memory for her

a short trip to NICE followed by a helicopter ride to Monaco, then after staying at a really nice hotel, give her your credit card whilst you go to Monaco football ground, and think rangers might play here in the super cup 2017, well you can dream, it will take your mind off how much she is spending

As the old joke says, give her a pair of bathroom scales - goes from zero to 60 plus very quickly!

More seriously, The Shard if you are near London. About £25 to get to the viewing platform (time limited I think) and then dinner in the restaurant if open by then - pricey I am sure.

I am surprised no one has suggested a ----------- roller coaster ride!

Hope she has a great day.

That is why men and women are so different. I'm a computer programmer Beth, identical/similar but different is a disaster waiting to happen.

The special place is good (not Watford, not what you're thinking), but no where near the Shard which also sounds promising, maybe combined with fluff's tea at the Ritz.

Those would obviously combine well with a show, dinner and posh hotel, but I hate singing and dancing shows, they bore me to tears.

I could then book her in for a service, I'm mean spa, with one of her mates. She'd enjoy that more than being with me.
