    Sacrilege. These things should be left in there respective boxes while chilli is being created.

    I'm busy giving it another good boil up to reduce it further ready for tonight.

    If you think for one minute my chilli will be relagated to page 4 you are mistaken. First i want some rep for my chilli. Come on, it deserves it. Last night all comers at the party were fighting over it and will have bum like a bosted pommegranite this morning. It was gone in short order and i am suffering from withdrawal this morning. I really want some. But i have decided on cumberland sausage (fiery) from premier meats on the team valley. Absolutely fab sos by the way.

    This. Especially for the cumin, it's one of the main flavours of the chilli

    also, i'll normally put in red/green pepper (and occasionally some celery) all finely diced. sometimes to mix it up, i'll throw in some finely diced smoked streaky bacon or some Chorizo or something.

    also, if you can find it, a tin of refried beans.

    Oh yes it is. Any time bye the way. It has been attempted before. Left them lying bust and blooded in the gutter. In Texas as well. I was appointed chilli maker in chief to New Braunfels of Canyon Lake.

    a lot of them do put (a lot of) cumin in. however as you said they don't put in any veg except the chilis themselves, so with your tin of tomatoes you're doing it wrong. you cant claim someone elses recipe 'isnt chilli' because they arent cooking it texas style when youre not either (unless you're conceding that you dont cook a proper chili either.)

    You are right of course. But i never said i was cooking the only version of chilli. The Texans refer to it as an eating chilli as opposed to a competition chilli. This has nothing but meat and chilli. So they reckon. Mine is the best though. According to my taste of course. But i also put in onions and shrooms. So more veg and fungi.

    To be fair, what is proper chilli? Same as curry really, we have dishes over here that we consider curries that you can't get over in India. It's because they're made to cater for our different palette and compliment the tastes we like over here.
    If you and your friends like the way you cook your chilli than whose to say you aren't cooking it properly? It maybe inauthentic to Texas, but then they've adapted their recipes from the original travelling recipe for expeditions, which was dried beef, suet, dried chilli peppers & salt.
    Me personally I add peppers and pinto beans into the mix.
    Also cumin is very important to a chilli, got to side with everyone on that.

    I decided to put in cumin afte the furore yesterday. Can't say it improved it. But i will take it on board for next time as well and try with more.

    Not at all, really compliments the spices, meat and veg well, brings out the flavour of them all and gives a little kick as well.
