Yeah mine may start next week once I've eaten all the cheese. Circuit training starts again Thursday. So hopefully that may help blast off my Christmas weight gain. I never bother making bolognese.. Would always rather have chilli.. May do a lasagne at some point this week. Well I've just dragged myself out of bed..
Ok, measures are rough but this should make a decent bolognese for four. 250g small diced lardons (pancetta). Or streaky bacon. 1 Large onion, finely chopped 4 cloves garlic, finely chopped 1 small carrot, finely chopped couple of handsfull of mushrooms, sliced 1 tin chopped tomatoes 1 tablespoon of tomato puree (or some chopped sun dried tomatoes if you've got any) 1 small dried chilli 1 large glass Chianti 2 bay leaves, fresh if possible 750g lean mince beef 1 Tablsepoon Olive Oil Salt and Pepper to taste Chopped Oregano or dried mixed herbs, which ever your preference. Heat oil and cook the lardons until crispy brown. Add onion and carrot and cook tll softened, then add garlic, chopped, and cook till softened. Add mince and brown off and when just rare add the wine and boil down to reduce by about half. Add the tinned tomatoes and a full tin of water which has rinsed the tin, add the tomato puree and bring to the simmer. Add the sliced mushrooms, the chilli (optional) and the bay leaves Simmer down on a low heat for two hours untill the water is reduced and the consistency as you want it. Add herbs and seasoning to taste. Serve over spaghetti with grated parmesan or cheddar and some garlic bread and the rest of the Chianti. Ciao mamma!
This actually made me want a bolognese.. Just checked my ingredients and I have no carrot. Or mushrooms so am having curly fries and mini kievs.
Going to have to battle to keep this front page. Made red pepper and goats cheese risotto last night and, even if I say so myself, it was ****ing epic. Will post recipe and method later.
Last of the leftover lasagne today for lunch, still got some medium rare beef leftover for tea, nice with some wholegrain mustard. Leftover ham on Friday but not sure what to do with it yet? I tend to buy these big joint at xmas and have loads of leftover meat which is good.
