    Sounds nice.

    well tonight i'm either going to have pork chops roast tatties veg and gravy.. or i have some rather nice butchers sausages and may have those with mash and gravy.. or while typing this i have actually decided i'm going to make toad in the hole as have loads of eggs which need using. then fill it with mash, veg and gravy.

    I've had porridge for breakfast and a weightwatchers pasta bolognese for dinner (courtesy of her stash in the freezer)

    ****ed it up by having two pieces of bloody walnut cake that someone brought in though. Bollocks.

    I didn't have a glass of wine yesterday, must be a record I think.

    I'm going to nip home for lunch.. Have a couple of cheese dogs.. Maybe pâté on toast as have some duck and port pâté.

    Definitely doing toad in the hole, going to fill it with colcannon then drown it all in gravy..

    May have to cook tomoro night for my sister.. Anyone got any good recipes for stew or Lancashire hot pot??

    tonight I'm going to roll Haddock loin(Cod is good too, but I prefer Haddock) in chopped fresh herbs from me garden then wrap in Pancetta, seal in a in nut brown butter then bake in the oven, deglace the frying pan with lemon juice reduce add olive oil, add chopped anchovies & and crushed capers, cook on a low haet till the ancovies dissolve and go mushy, throw in fresh chopped basil and leave to one side.

    earlier make a basic tomato sauce with fresh chopped and peeled tomatoes(tinned will suffice for those lazy ****ers out there :)) add tons of roughly chopped garlic and olive oil with a glug of white wine vinegar, lil sprinkle of chilli flakes. Add to the sauce tins of whatever beans you like - cannellini, black eyed, chick peas knock yourself out:) one rule plain beans only, in salted water not sauce. bring to the boil. then pour mixture into a caserole dish and bake on a moderate heat till your patience runs out.

    serve in a bowl, place haddock on top - reheat butter sauce and drizzle over the fish.

    Lancashire hot pot;





    1.5kg/3lb 5oz neck fillet of lamb, cut into 2.5cm/1in pieces

    Stick a couple of lamb chops in too

    sea salt and freshly ground black pepper

    1 tbsp vegetable oil

    75g/2¾oz butter

    6 lambs’ kidneys, cored, skinned and chopped

    2 large onions, thickly sliced

    3 cloves garlic, roughly chopped

    2 tbsp flour

    1.25L/2pt 2fl oz beef stock

    2 tbsp Worcestershire sauce

    1 bay leaf

    2 sprigs fresh thyme

    1.5kg/3lb 5oz potatoes, peeled and cut into 5mm/ 1/4in thick slices

    350g/13oz frozen garden peas, cooked according to the packet instructions

    Preparation method

    1.Preheat the oven to 180C/350F/Gas 4. Season the lamb with sea salt and freshly ground black pepper.

    2.Heat a large ovenproof casserole until hot, then add the oil and butter and sear the lamb until browned all over. You’ll have to do this in batches.

    Technique: Browning meat .Watch technique

    3.Set the lamb aside then quickly sear the lambs’ kidneys in the same pan. Add the onions, adding a little more butter to the pan if necessary, and cook for about 10 minutes until they turn brown at the edges.

    4.Stir in the flour and cook for one minute, then add the stock and Worcestershire sauce. Whisk until the flour and liquid are smoothly blended.

    5.Season with sea salt and freshly ground black pepper and bring to simmering point. Return the lamb to the pan then add the bay leaf and thyme.

    6.Arrange the potato slices on top of the meat, overlapping each other as you go.

    7.Season the potatoes with sea salt and freshly ground black pepper then dot with a little more butter.

    8.Cover with a tight fitting lid and place in the oven for 1½ hours.

    9.Remove the lid and turn the oven up to 200C/400F/Gas 6. Cook for a further 20-30 minutes until the potatoes are golden brown and crisp.

    10.Pile the hotpot onto plates, removing the bay leaf and thyme as you serve, and spoon the peas alongside








    I'm cooking this weekend again. Going to do a chicken and chorizo casserole, pretty much because I've a chorizo in the fridge which needs to be used.

    May have a go at that this weekend.. My only issue is I don't have one of those pots that you can use on the stove and then in the oven...

    That hotpot sounds wicked.

    For lunch today I'm having a roast beef and onion mayo sub from M&S with some cheap sainsbury's crisps. Dinner tonight is rigatoni with homemade sauce and meatballs, takes a while to do but well worth it, been watching the Sopranos again and every time it makes me want to cook Italian.

    <laugh> I should've phrased it better tbh tunns, I have a cousin who has them all over his torso and arms but he's well into the music and had them done at a mature age where he couldn't regret them. I mean these ****s who get them all over their heads and hands etc etc and Ruff said.

    There is that, there's also a Goodfellas cookbook which is similar and good.

    Where you from Luv, Merthyr? I'm spending a bit of time up and down the valleys at the moment.

    Today Bargoed, felt a good 3 degrees colder than where I'd come from.

    My wife works in Merthyr but we live nearer to Aberdare and yes it is kind of gloomy at the moment.

    Used to play footy for Abercwmboi when I was a young lad. It is a bit sinister around here as the weather gets worse, it seems to bring out all the psychos, the train journey home can be interesting.

    Had a crazy night in Mount about a year ago in the pub by the traffic lights at the bridge. My train broke down so I thought **** it I'll go watch the footy. It's the kind of pub where there is only cans and none of the pumps work.

    Anyway some pissed guy took a swing outside as I was off home I knocked him out and the whole pub ran outside and surrounded me. I just stood there thinking I'm a dead man, they all started apologising for the guy taking a swing and insisted I came back in and had another drink. ****ing valleys are mad!
