Her role is Queen of England, ruler of the British Empire, and ruler of the commonwealth. Thats her main role, the fact she's head of the church doesn't mean a thing, we're celebrating 60 years of her rule over us, not 60 years of her rule over the church.

Defender of the faith doesn't necessarily mean what you're implying. It can be taken as defender of the realm, which is what she actually is.
