There are many examples of speciation in the fossil record. If you're looking for a total, 100% record of every animal that's every existed, then I suggest that you look at how unlikely it is for a fossil to form. What were you hoping to see observed, given that evolution states that these changes would happen over the course of many tens of thousands of generations in complex animals? There have been other examples of speciation, where interbreeding was no longer possible, but you'd really like to see something that we simply haven't been around long enough to observe. By setting those boundaries for acceptance, you guarantee that nobody can fulfil your criteria.
