    Got both but **** that in this weather, I’ll just use the oven and if I’m feeling a bit fancy I’ll crack out the mapp torch for a bit of charring <laugh>

    No, no, no SW3! That looks delicious but carbonara is eggs, cheese, pepper and pancetta/guanciale. Nothing more nothing less.

    Cook what you enjoy yes, but some things are classics and shouldn't be altered imho. I mean, you wouldn't hang fluffy dice off your Ferrari rear view mirror would you? Please say you wouldn't...:emoticon-0100-smile

    I cook some classic Italian and South Asian dishes.
    Sometimes I go off piste and there is nothing wrong with that either.
    Near to where I live there is a traditional Italian restaurant that serves the right pasta for each dish. It’s actually very close to the Ferrari garage! Their carbonara uses cream as well as egg. If you go in there and tell them it’s wrong, expect a horses (New Forest Pony) head in your bed!

    I agree to a point, but I found out the hard way even chicken ruins a carboner. Is that cabbage?!

    Do it the Scandinavian way - ketchup in a bolognese, carrots and broccoli in a Pad Thai, a doner kebab on a pizza and even a taco with nachos on a pizza, for those who can't decide between Mexico and Italy.

    I was chaperoning my daughter when she played a game in Barcelona earlier this year and went out with the team afterwards to some tapas place and they were serving red wine mixed with coke and ice... The reason being that it made bad wine taste nicer... **** that, I'm 56 and hadn't had a drink for 3 years, just get me a glass of decent wine instead of some kid's cocktail from hell.
