Neighbour gave me a bag of these, will boil them, fry some bacon pieces and combine and serve with fried egg and potatoes.
There are lots of foodie myths - one being that pork needs to be well done - just needs to be sufficiently done to kill any bacteria - seared meat (not burnt) is arguably the most tasty ... The weird one is duck - the top chefs etc maintain that it should be 'pink' ... but a scientist I worked with a few years back told me he always requests it well done and sends it back for more cooking if it arrives pink - on the basis that it carries exactly the same bacteria as chicken and we wouldn't eat pink chicken - not a huge duck fan (unless Peking crispy) so not a big problem for me ...
Cherry smoked lamb... all the usual stuff and slightly minted gravy. Had to do it a bit past the normal pinkness as my mother is right fanny when it comes to food, but the lamb was still very tender after a good long rest.
Yeah well done pork is a waste. Can easily be cooked pink... All comes from YEARS ago when people selling meat would feed pigs all sorts (including other pigs). Nowadays, well sourced pork can and should be eaten medium rare (imo).
Not sure I'd go medium rare with it! - but certainly there is nothing worse than over cooked / dried out pork - like chewing old boot leather...
I just like to treat it like steak in the main. Take it a little past what I would a steak temp wise and then let it rest up. Hot and fast on the outside for a nice sear and some texture. One of the best thigs I ate when we were in Rioja recently was a basque pork steak (we all thought it was steak). Bloody lovely flame grilled.
The law on the temp you have to cook pork to in restaurants was relaxed so it doesn’t have to be burnt. I reiterate this was not burnt.
Another foodie myth, never buy bagged salad leaves, You should also avoid sandwichs with salad in. You've probably got more chance of being made ill by salad than meat I tend to find but the meat often gets the blame.
I treat it like I would a steak but as if I'm doing a steak that is well done so that it's just cooked.
