Making BIR base used to be my Boxing Day tradition. Done it for years - quite satisfying seeing all the ingredients come together, but more recently I have moved on to pastes - far less of a **** on and tastes exactly the same.
Tip: Curry base partially done in a pressure cooker speeds up the process, you can make a great base in about half an hour.
I went on line a few years ago now and it is ‘top of the pops’ with my better half. But it gets even better using ‘lndian Oil’ found on the same site. This to marinate and to add to the other half curry that is added to the base. l make:- Butter chicken Madrass Korma . Couldn’t be without it.
Have always been a charcoal man, mixed with fruit tree wood, usually apple. I do the slow shoulder of pork (10 hours), and brisket regularly and it cant be beaten. 10 hours cooking for 45 minutes eating . Anyone wanting to get into BBQ get the Grillstock book - brilliant source for great BBQ techniques which you can build from. For reference they now do Gas/Coal BBQs. You can set it up for either. Not sure you have a lot of adjustment in terms of coal height.
Usually follow Al’s kitchen recipes. Also have a curry guy book. A bit of a faff but worth it. Haven’t tried any premade version as yet.

Soup out of a tin for me and Mrs K tonight. Easily pleased. Although my gran used to do the best broth ever. Unfortunately the recipe died with her. I remember it was green looking, had lentils, leeks and ham in amongst other stuff.
Might do some batch cooking at the weekend seeing as the missus is away. Some veg soup and some curries for the freezer I reckon
Its so easy to make, I love it and can eat it for days on end, my ex had to have different food everyday, which isnt half as easy Soak Broth mix overnight 120g (lentils and barley) 1kg Ham or Gammon simmered for 1 hour Remove from liquid Add Broth mix, diced potato, carrot Swede and Leek Make sandwiches with the ham when cooled, chop some ham and add to broth Done
The wife just made a massive pan of broth Gives some away to family however we eat the most of it over a few days She sometimes freezes some I love broth with ham sandwiches she’s been making broth for over 50 years and it’s perfect
