People have been saying that eating insects might help solve problems for a while now. They eat them in plenty of places. I've had a few different types. They're alright. Locusts are just land prawns.

Most humans have a problem digesting chitin, which is the chemical component associated with the shell on bugs, I believe some Australian Aborigines and as such related populations like Thai's have a genetic factor that is able to digest it better, similar to how Europeans can eat dairy and other peoples cannot.

A 2007 paper by Paoletti et al. details the identification of Chitinase in the gastric secretions of a sample of Italians. A paper published in Nature this year also states that no one should have problems digesting chitin and that in addition to protein and micronutrients, insects are a much better source of dietary fibre, Omega-3, and other fatty acids than most animal products.
Also, one third of the adult population worldwide are lactase persistent. Milk consumption isn't just observed in northern Europe, its also a traditional feature of some central and southern Asian, middle Eastern, and sub-saharan African diets.

Sure, but at much lower rates, Northern Europe is around 90% LP. Also there are studies that show persistent consumption of Chitin may contribute to conditions that lead to IBS, I believe there is some pressure from lobby groups to suppress this as there is now a narrative that proteins derived from bugs are better for the environment than cattle and a lot of wealth has been pushed into this sector already in anticipation of the switchover. I wouldn't trust these new studies any more than a study tied to the bigger pharmaceutical companies in the US.

Same place as me probably. The only opposition to eating insects is cultural. You and me are just ahead of the curve.
Most edible mushrooms are composed of chitin (between 8 and 43%) and glucans (as well as protein) so eating insects (approx 60% at most) should be OK.
