Like they’d just give the cows arse a quick wipe and stuck it on the tray. It’s the only way I can eat it. I feel like I’m respecting the animal this way as well.

That's going to be very rare, there would be no colour on the meat at all if it wasn't for those stripes. Nice if you like it that way, medium for me but don't mind if it's medium rare.
