Nah the onglet is a scruffy looking bit that lurks about just off the back of the fillet. Traditionally a butchers cut, as it’s a bit scruffy looking for restaurants, but it’s becoming a bit more popular nowadays. Skirt steak would be like a bavette. A wider, flatter cut. Excellent in salads but you can only find em for a few weeks a year. **** loads grow near a river I walk along with the kids so we pick en and freeze the leaves but keep the scapes in the fridge for a couple of weeks.
