Looks good mate although if it were mine I’d like more red chilli’s & probably some real kraprow leaf. Tidy nonetheless.

Me too but lamb is hard to source here and usually at crazy prices. Although occasionally I do manage to buy kilo bags of lamb trim from Bangkok which is ideal for mincing because of its high fat content but I skim that off & use for roast potatoes.

Early start as the weather is really cool & ideal for making pastry.

    600g APF
    1 tsp salt
    1/2 tsp sugar
    1 1/2 tsp baking powder
    Pinch of turmeric
300g Butter/ shortening. I use blueband butter margarine.
Blend together with a pastry shredder so it resembles breadcrumbs. It will come together at this point but I add 80-100ml of cold water and knead it in the bowl. (Don’t knead too much or you will build up the gluten) this makes it rollable immediately. Roll out to about 2.5mm to 3mm thick.

That will make about 11 6” discs & 5 4” discs. Just reduce recipe amount to suit.

    Good luck.
