One thing to add, recipe suggests 2.5 hours cooking whereas 5 hours is about right. I just chuck everything in after browning the meat put it on low and wait.

Poove! At about 11 o'clock are chunks of "cow leg" or hoof as we would call it. The rest is assorted offal and some bits of flesh, maybe some goat in there. If it's anything like what I had in Leicester there's so much chilli you won't taste a thing other than fire. Your lips will stop tingling after an hour or so. Give it a go.
