I have been making lentil soup quite a lot recently. Just boil lentils, carrots, onions, celery, leeks and chuck a couple of stock cubes in and some of those wee bits of ham you get in the supermarket then liquidise it. Bloody lovely in these chilly 20 degree days.

 

If you're making soup regularly then you should use bouillon instead of stock cubes. Cheaper and holds much more flavour. I prefer the paste versions.
