Presume it has something to do with rebirth, symbol of the egg, new life. I.e. The end of winter and coming of the Spring.
Could be but the way i heard it (and could kind of accept) as a 7yo in morning assembly was, the egg represents the stone which was rolled across the entrance to the cave that Jesus was interred in as it was oval shaped
