My favourite cheese is entirely dependent on what I'm using it for.

A extra mature cheddar is ideal for roasted cheese for example.

 

I use feta in my delicious stuffed mushroom recipe. It can be full veggie with toasted nuts or if you like meat I also do a version with bacon lardons. PM me with dick pics, I mean recipe ideas.
