    No mate, before the butter goes in. When you've fried off an onion, then add in the rice before any wine or stock goes in. It turns the rice translucent.

    I fry it off in Olive oil, but I suppose you could use butter too.

    Soffritto should have garlic and celery as well. Even finely chopped carrot.

    To be fair, I didn’t spot the mushrooms. @Quesadaad could have shredded cardboard and slapped it on his plate and I wouldn’t know the difference.

    I use Onion, ginger and chopped celery. I add the garlic later as I like to fry off my rice until it goes translucent and I don't want to burn the Garlic, as it makes it go bitter.

    I wouldn't fry that in butter alone as the butter will split and burn. Might add some to the olive oil next time though.
