If only persons of an English speaking country go there, yes, they only have to learn one other language.

I was on holiday in Turkey this year and the bloke who was serving me drinks in a bar was conversing with us in English (obviously), but also fluently to Germans and Russians (I'm using that term loosely because it sounded Russian to me) and Italian without breaking his stride. He could also easily deal with other nationals where they settled on a common language (English).

As for which language should we Brits choose? None, clearly. Everybody else is making the effort.
