Best additive to a chilli if you can find it is smoke sauce. They used to sell it in Tesco and don’t anymore. It’s in a bottle like Lea an perrins. Amazing stuff. I’ve tried sweetening chilli with dark chocolate and cinnamon sticks and my preferred way is dark brown sugar.

They look good. I’m marinating things at the moment. Got 4 flash fry steaks and 4 lamb chops in a Turkish marinade of garlic, cinnamon, cumin, cayenne, salt, oregano and olive oil.

doing triple cooked dirty chips with mozzarella for a normal sirloin , sautéed asparagus and some green beans.

If you use shin, it takes some cooking.

Make it the day before, let the meat break down.

Well they’re not proper dirty fries as need pulled pork in them. Will add, smoked paprika, onion powder and garlic salt. Grate the mozzarella and whack in an oven for a few mins to melt the cheese.

you can get the chipotle chilli paste in most supermarkets. Use it for Mexican dishes.

dark chocolate is the best for taste/colour for me I think.

No reason other than when I used it was done in a slow cooker, so was cooking all day.

Normal diced beef is fine, but even this will need a few hours. Worth the wait though.

Keep it fresh init luv, never let a jar of ragu near my spag bol for example. All blended toms and fresh spices to make my own sauce from scratch. I'd never buy a chilli con carne sauce in a can either, what's don't knock anyone who does tho tbh it can be a chore making **** from scratch and some don't have the time.

Would struggle to use the paste to make a meal, it’s about the size of a salt pot. Just the chilli blended with oil, bit like lazy garlic, a lazy ingredient.
