    I think mine are brilliant.

    my spice blend is as follows.

    2 tbsp of dried chipotle chilli
    1tbsp of hot chilli powder
    3tbsp of smoked paprika
    1tbsp ground cumin
    1tbsp oregano
    Then salt and pepper to taste.

    i brown the steak mince and half way through browning add half a tube of tomato purée and then lob in the spice mix and chopped onion. Then add tin of decent quality chopped tomatoes and a tin of pasata with peppers and a couple of fresh chillis. Then lob in kidney beans inc juice and simmer for a min of an hour. Longer the better. Then do the rice in chicken stock.

    Right up my street that. I bake my fish in a baking paper parcel 90% of time. Never overcooked/dry that way

    Sounds decent mate if a little traditional... I like chiefs idea of diced beef instead of mince tbh.

    Oh and dark brown sugar and cayenne pepper. If you’re pushing the boat out use normal peppers and one of those long sweet ones.

    Diced beef is brilliant, I just never think to buy it. Chicken chilli is horrid. Tried it and hated it.

    did a chili today. Used maple syrup over brown sugar. Couldn’t tell difference/didn’t think it made difference
