Most British people prefer their food on the bland side...unfortunately this has led to westernised versions of some of the worlds greatest cuisines. It's now virtually impossible to get truely authentic Indian/Thai/Chinese food in the UK unless you eat at someones home.
I’ve got that book...some tasty stuff in it. I’m sure you can make tasty quick curries but traditional homemade curries take longer than an hour usually. They look very different to takeaway stuff..the taste is massive in the sauce(shorva)
That's exactly what it is...plus it’s fast food...dollop of base gravy, 5 mins on pot...out. Spoon fills of the required spices...not enough time to truly mix and cook through...nothing like homemade
Indian or Chinese food is a version of thise cuisines in 90 % if restraints and takeaways. You are never going to get a recreation of a mutton curry you had visiting Delhi or get fresh Schezwan peppercorns In a Chinese dish. in the U.K. we are food magpies, we will try anything and adopt to make at home.
I have takeaway for an easy fix, but as you said, it’s not traditional Indian/Asian cooking. the stein book inspired me to also get a pressure cooker. Helps speed things up too.
So you mean like when I'd order 4 different dishes from a local take away and they'd say...ready in 20 mins ? Used to practically live of those curries when I was younger.

Very true, we used to have a thing where we would go round other workmates houses on Fridays. Most of the guys were Indians or Pakistanis food was great but boy could those buggers drink whisky.
