I had a lovely shin beef stew for tea, made with red wine. It was delicious. I know the thread's about cheese, biscuits and soup but a stew is basically a big-boned soup if you ask me.
I used the chicken carcass to make a great soup the other day. Stripped the breast thighs wings and legs off for other meals. Chucked in a thigh and leg into a pot full of water, an onion a handful of pepper corns big chunks of ginger half a bulb of garlic celery and leeks . Let it simmer for 6 hours . Drained the juice the next day pulled the meat off the bones and put to one side. Reheated it with diced carrot Savoy cabbage carrots and a can of green giant corn . Seasoned and served as the spuds and carrots were al dente. Probably cost less than £3 and delicious . I'm eating chilli lotus root with a nice glass of Chilean red.
