Easy mate, you have to cook the rawness out of the flour but don’t let it burn, try using more butter or less flour.
Little spoon of colemans mustard in, especially if making it for col cheese. Also cook the flour butter out for 1-2 mins and for a few mins after adding the first splash of milk. Purists would say add white pepper, nah, fresh black pepper for me.
Home made enchiladas tonight. simple sauce, simple construction, always look like I dropped them onto the plate from the roof!
