Hmm, for me a light stir-fry would include all of the above plus fish sauce, sesame oil, chilli flakes and a bit of love.
but that wouldn’t be light and would lean more to a Thai/Malaysia type dish. No palm sugar and lime? it’s sesame chicken. Can you suggest a dish that incorporates those that I can follow and make?

Bought some Udon noodles, look like worms but I really like them. Might do something with them tonight.
Yeah Ginge is right, so much more can be added there and it'll still be a light dish but work loads more flavour.

Interesting, not sure on what to do yet but I read that chipotle chillies go really well, make a paste from them with garlic and ginger, I have some in so may give that a go.
