you are correct tho, salt and pepper do it to some dishes...sugar to many...even vinegar to a vindaloo.

It just enhances the flavours mate...Many hate it..
I could probably knock up a different thai/chinese dish each day for at least a few weeks.....
mid you have to put that in your Chinese/Thai dish then you haven’t done it right. It’s what makes all the glue like sauces in Chinese takeaway food here in U.K.

Most likely couldn't tell because the curry sauce overpowered the rice.
Yeah, the msg will make it salty. The starch makes it gloopy but only if you add too much.min China yes, here in the U.K. they add MSG. That’s why the dishes are salty as hell and like glue.
