    Cant beat freshly baked bread. There is a big bakery right next to our complex. Smells great when they are baking.

    Tricky. That’s what I’m making too.

    Doing chicken chorizo and prawn. Going to use chicken thighs.

    I’ve been informed by the Spanish arm of my family to fry the meat off first then remove from the pan. Then add the onions and peppers to the pan. Then add the meat back in with the rice for a few minutes then start adding the stock. Then cover the dish with tin foil.

    I bag up the chicken thighs and freeze them mate. Do you own a freezer? They’re truly ingenious devices that enable you to freeze your food then defrost when required so it doesn’t go bad. <ok>

    Actually I did learn something by Sucky ripping the piss out of you. I'm like you and would buy a large pack of chicken breasts or whatever, then separate them into bags for the freezer. However, what I never realised is how long you can actually keep the stuff in the freezer. I used to think a month, maybe two at a stretch, but it appears you can keep them like that for up to 9 months!

    I copied this from google;

    Raw chicken pieces can be stored in the freezer for up to 9 months, while a whole chicken can be frozen for up to one year. Cooked chicken can be stored in the freezer for 2–6 months (1, 2). Summary Raw chicken can last in your fridge for 1–2 days, while cooked chicken can last in the fridge for 3–4 days.19 Apr 2019

    Apparently the correct way is when it is all combined and nearly cooked you cover with foil for ten mins prior to serving.

    Ive just been on the phone to the Spanish chef who cooked paella at my wedding. Though I had a proper valenciano paella with rabbit, pork and some seafood. Was amazing. Done properly over charcoal in a giant dish as big a garden table.

    Shouldn’t traditional paella be rabbit?

    I guess chicken thigh would be the closest to that.

    always thought paella was a central region dish, so seafood is just a jazzed up version.

    Yes and snails in a proper one. If the correct season they use wild boar. Normally the ribs.

    Paella originated in Valencia which is on the coast. Really paella is their version of bubble and squeak as they put pretty much anything in them that left in the cupboards. Peasant food.
