    Did the risotto I cba to make the other day when I had beans on toast.
    I've posted this before but not the recipe I think.

    Add red lesta cheese and peas to that.

    Fry 400g of chorizo(lidl spicy chorizo is the best) until oil is released.

    Add the chopped onions and fry 'til just turning brown.

    Add 350g of arborio rice and fry for a further 2 mins.

    Add two tablespoons of red wine vinegar and fry off.

    Add 1 tin of chopped toms and stir in.

    After stirring in 1.3l of chicken stock ladle by ladle add your cheese with 2 ladles left.

    With one ladle left add your peas, I like four hand fulls.

    Reduce so its nice and creamy and thick.

    i don't know if i like that or not.

    yes it looks great. but the idea off one dish off soggy rice doesn't strike me into wanting to do one.

    i think i'd get bored of it quite quickly.

    maybe a portion and served with something else?

    Peas are perfectly acceptable in a risotto, quite often have a prawn n pea risotto.
