I just don't like mint. I have some lemon thyme growing in a pot and it's amazing with lamb. @Slurpcock I agree on cumin, is probably the spice I use most.
I use shed loads of cumin and coriander but has to be freshly roasted and ground. After one week it losing that lovely fresh fruity smell.
Thai's love the head on fish and usually suck out the head.
