I'm going to put this bit of info out there and then take cover but the white sauce is a French thing and Italians use ricotta cheese. I did READ it and Wikki may have been involved at some point so tin hats on. So you're right not to add bechamel sauce to your lasagne, if only there was someone who knew a lot about Italy from living there half his life via 2 week holidays, I'm sure that person would put us right?

I wouldn't make white sauce mate. Alls I know is when I've ever had lasagne with white sauce it makes the thing all snotty like. Made with cheese instead and it keeps its structure if that makes sense.
