    The rabbit is very good.

    I normally order the Valenciano paella minus the the snails and have prawns instead. To be fair most restaurants do the same.

    Tbph I did wonder what the traditional dish should be. I thought it was meant to be left overs, much like bubble & squeak (left over spuds and veg) or bruschetta (stale bread).

    The whole premise of paella is a bit like the same premise as bubble and squeak.

    It’s paupers food and was made with leftovers.

    Most folk had chickens, killed rabbits and snails are cheap.

    Best paella’s are in the Valencia region.

    Had my wedding there. Had a valenciano paella In a giant coal fired dish and a vegetarian one plus a hand picked black pig fed on truffles and turned bless it into a Serrano .
