    Robbing bastards. Thought I'd treat myself to a steak and kidney pud the other night, not had one in years.

    No chunks of meat to speak of, certainly no kidney that i could taste, mostly gravy, in summary it looked hee haw like this:

    Not had a Fray Bentos since the 70's. Shame you got an empty as that pud looks mint.

    I was hoping this was about the city in Uruguay.


    Why spoil a steak pie by putting kidneys in it? Even though there was no steak or kidneys.

    I like a steak and kidney pie. Devilled kidneys are superb, especially my recipe. I can post it if you like.

    Devilled Kidneys

    8-12 fresh kidneys (lamb or pork)
    1/2 pint chicken stock
    2 tablespoons plain flour
    2 tablespoons tomato puree
    2 teaspoons garlic puree (to taste)
    2 teaspoons English mustard (to taste)
    4 rashers bacon
    200g mushrooms
    Salt & pepper
    1/2 teaspoon paprika (to taste)
    Worcestershire sauce - approx. 2 teaspoons
    1 teaspoon dried mixed herbs
    1 tablespoon olive oil
    Long grain white rice (per person)

    Core the kidneys, cut into approx. 1" pieces and toss in seasoned flour, fry in oil on a medium heat until browned
    Add chopped bacon and put remaining flour from coating kidneys into pan & allow flour to cook for 2 minutes
    Add stock and stir so flour/lumps are absorbed
    Add tomato puree and stir well, add in mustard (more or less depending on how hot you like it) add garlic to taste if wanted
    Add a couple of dashes of Worcestershire sauce, doesn't have to be that accurate
    Add dried herbs or fresh herbs of choice - coriander or parsley works well
    Put in button mushrooms whole or quartered mushrooms if close cup variety, can be added with the bacon if you prefer mushrooms well cooked
    Add paprika to taste depending on how hot you want it
    Salt & pepper to taste.

    Leave on simmer for however long your rice takes to cook, drain rice and serve. Should do for four people.

    All measurements are a guide, I've done this so many times the ratios always vary but tomato puree and English mustard is where the taste comes from so put however much of each in as you prefer.

    I had an Uncle Bob once but that's another hilarious story altogether.
