Surely if Chief puts veg covered in boiling water in a microwave it is still boiling them You can get the same affect not dissimilar to blanching, without the cold water finale.
You'd think, but the water isn't actually 'boiling'. There not much worse than over boiled, soggy, broccoli and cabbage. I happened on this method purely because it's a good way of cooking stuff in work and it works. There's no genius to it or owt!
Broccoli is best when roasted in a little oil and salt. I appreciate that you're unlikely to do that at work.

Blanching isn't over boiling. It's like the previous debate over scrabbled egg in a microwave or in a saucepan....and some of the chat was around the mess it makes of the pan, it don't it's the way people cook it that's the problem as per the same with the veg. But take your point about work
