Going back to the steakhouse on Wednesday as a my mate is ****ing off for 6 months so having a farewell dinner.

Imagine I will have the same again.

Didn’t mention i had it with a Roquefort and creme fraiche sauce. Which was lush. Also had a pot of ketchup being a heathen I have to have ketchup with steak.

I quite like a bit of ketchup with a steak. Fortunately Stanette has ketchup with everything so I don’t have to ask the waiter/waitress for it.

I'm gonna buy some duck breasts this weekend..Obviously i work in a frozen/chilled warehouse so get to see everything before it goes to the the shops..And as meat is quite heavy, i seem to spend a lot of time in the part..

So any advise of duck breast, and what to have with it?

I’d pan fry those skin side down but score the fat with a sharp knife first, don’t cut into the meat. This ensures your duck will stay flat during the cooking process, don’t add any oil to the pan as a lot of fat will render out of the duck. Season before with salt and pepper. Fruit based sauces go well with duck as do creamed leeks and fondant potatoes but hash browns will suffice.

Went back to the start of this thread last night, for some reason, and read a few pages from seven years back when Sweats first posted it.

Was on the United board at the start, some of the names who used to post and no longer exist.

Luv was on second page, sniffing out a food thread!

    Seven years it's been running!

@Commachio don’t heat the pan before you start frying.

@Chief UIR was an early contributor. Whatever happened to him...?

Didn't last long but he is apparently still alive!

Sat working from home deciding between porridge and berries or a bacon butty for breakfast.

I'm kind of edging towards the bacon option.

Absolutely Commy, whatever your taste. Make Cumberland sausages here to a fashion. Popular with the ferangs but not perfect mind.

I've got some steak for tonight...Going to do fried potatoes instead of roasties...I've actually already par boiled them, only for 10 minutes, so don't go overly soft.

Got some small button mushrooms (open to options as how to do), my favourite sausages, and that's as far as ive got so far...

Tips or hints, or alternative recipies welcome,
