    Do too many new potatoes one time with a meal, then save some to go cold for the next day (keep in fridge), cover in olive oil and season, roast in the oven until crispy. Nice easy addition to accompany a meal.

    On a low heat mate
    you could do, but i had ages inbetween the frying times so just left them..

    Oh they were superb btw, Done in sunflower oil.

    On thrice cooked chips the first cook should be a par boil then chill them.

    You won’t regret it.

    i threw in some onion rings aswell, mind i went a bit overboard, and used a whole bag, got half the ****ers lying in the kitchen still.

    I was tempted to make my own, but didn't fancy ****ing up 3litres of brand new oil

    Making your own onion rings is marvellous. Getting the batter right is tricky though. I haven’t done anything like that for about 10 years. I used to just use flour and sparkling water for the batter.

    Nice mate, that’s what I do. Par simmer till they show signs of pitting, refriferate fry for 5 mins at 130c, refrigerate then fry at 150 till golden.
