I should rephrase - their main role is to provide protection. And DM is a role, not a position. As you say, Kante is a DM but he plays further upfield than Jorginho. Same with Alonso and Mash. It’s not a coincidence that we’ve seen better performances out of Hendo and Gini when they play alongside Fabinho (small sample size). Because a quality DM allows others to flourish. Fabinho is a top class footballer - both defensively and offensively. But his main role is to provide stability and protection to the back 4.
And yes, teams like Barca City Loool spend more time on the ball attacking than defending. But that’s why you need a quality DM because these teams have more players going forward, which means DM has a lot of space to cover in case we lose the ball. Hence why positioning and intelligence is crucial.
no. there's no such thing as just a dm in proper football. there's midfielder who play deep and then there's journeyman hacks to crab sideways and kick people who got a name made up for them so they look more acceptable.

Sidwell and scotty were both cms at charlton and reading respectively. Plus we had claude makele and as much as jose/claudio is a master of the 9-0-1 formation, im not sure he got them in witj the mind of playing both claude and them on top of cbs. Sidwell always struck me as one of those transfers Chelsea made under Mourinho which were more about stopping other teams having them rather than Chelsea really wanting them.
What about mascerano, I'd put him as a DM and kante. Surely a defensive midfielder is there to break up play and help the back four out as his primary responsibility, an attacking midfielder is there to support the attack, I've got a feeling the clue might be in the name. Obviously you would hope your midfield could do a bit of everything, but that is expected of all positions now. You want your forwards to help out in defence, and certainly your full backs to be able to join the attack.
