I’m gonna have 4 cans of Guinness for dinner. If I’m still hungry afterwards I’ve got an American Hot Pizza in the fridge.

Had all the Madras curry and Bombay potatoes that wouldn’t fit in the take away containers.

Just got a Tesco finest sirloin steak.

Needs must, was on way home from the match and there was **** all other choice, it's not very big.

Will make a pepper sauce and some fries and post pics when it's plated!

(Mrs is out & kids have eaten, hence me cooking for one)

It involves cream, which I don't have!

Doing a red wine one instead.

Make a beef stock and add a table spoon full of green pepper corns to soak. A stock cube will do to make the stock.

Cook your seasoned steaks in a knob of butter.

Take them out to rest, add a splash of olive oil (to the pan) and heat.

Add finely diced shallot or red onion and soften.

When softened, add very big splash of brandy and turn up the heat. Flambe the shallot till a 'jammy' consistency.

Then add beef stock with green pepper corns and reduce on a high heat.

When reduced, add a glug of cream (or two) and bring to simmer slowly. Add ground black pepper to taste and when at The right consistency, add the juices from the rested steaks.

    Serve.

    That's it. <ok>

This is a red wine version, had no fookin' cream.

Still good, as rich as It looks but not too much.

I'm all over this rum thing @luvgonzo.

Recommend me a light (brown) spiced one and I will be buying for the festive season.
