Found the right blend of minced pork to fat ratio 25% season it with garlic salt, sea salt, black pepper, paprika, chilli flakes, sage and fennel. Will make sausages when my order for skins arrive.
Not feeling it with chilli flakes. I love a proper artisan sausage roll. It’s the pastry I can’t eat.
