    I have chicken breast covered in bacon and stuffed with cheese with roast potatoes, mediterranean veg (courgettes, red peppers, tomatoes, garlic and red onion), roast potatoes and spinach. Can't be bothered with full roast for meat anymore as only me & Mrs No7 and she is a veggie.

    I am though making a roast chicken for the dogs, but I won't eat it as it is too bland for me as I can't add garlic/butter/herbs etc :) They eat it in about 2 days.

    Busy doing stuff, so cottage pie cos it's quick and easy to make. Will make 2 so 1 for tea and 1 for the freezer.

    Ordered that Indian food cook book someone on here mentioned so can’t wait to try. Going to get in to cooking as I’ve stuck to chicken, rice and veg recently.

    Tonight I had:

    Stir fried onion and Pak Choi with Oyster sauce, placed on noodles, with grilled salmon on top.

    Oh yes, sweet chilli sauce drizzled on the salmon.

    My pseudo roast had to be aborted until tomorrow due to time constraints (I love working form home :) )

    So I had home made Bolognese on Rigatoni. I raise a glass to my late mother every time I make 'her' bolognese. Simply Bellisimo. Grazie Mama.

    Without going through it all bit for bit, this is the base - add marmite and garlic and chillies and pretty close to Mama's

    Edit: and fry the meat in a touch of Balsamic Vinegar. Oh and Mama didn't use Marmite...I've added that :)

    I like how it says cooking time 40 mins but says to simmer for 3 hours

    I do spin on it with rump steak and pork steak - in the slow cooker for 4 hours.

    Yeah i don't think I'll ever be cooking anything that long, I'm too impatient and no food tastes good enough to warrant spending that long cooking it imo. I tend to cook in batches as well, do all my dinners for the week in one go at the weekend
