Must say I always plump for medium rare. What kind of sauce? Red or broon or perhaps Japanese mayonnaise? Personally I like mine with cracked peppercorn sauce. Obviously this thread does not apply to the ****terites on here who can't see past pretendy quorn sausages and mince. Sad ****s. I like steak, me!! But not very often to be honest. I more a fish type person. I know my plaice.

Before I became a vegetarian I always had my steak rare, whether it be beef or my favourite, venison. Venison steak cooked rare on a bed of creamy potato mash, panfried kale with a whisky sauce And, yeah, anyone who eats their steak well done has even less right to call themselves a meat lover than Toby.

Medium rare. No sauce of any kind. I'll order rare if I've been to a restaurant before and thought they overdone my medium rare.

Fillet, coated in oil, salt and pepper, flash fried on each side for 2 mins then left to rest. Sauce is for ****s and *****s.
Also, if ye had the steak in the fridge take it out and let it get to room temp before cooking. I think that's true of any food out the fridge.
