    I did a lamb thingy on the BBQ the other day. It was a Rick Stein job. I’ll post the recipe tomorrow if I remember.

    Don’t over cook them!

    Duck needs to be rare, no idea how you’re going to achieve that on a BBQ,

    Do you have one of those cop out gas things?

    I would never use a gas BBQ!

    I divide the BBQ in half so that there's no coals at all under half of the grill but the enough residual heat to cook things at a lower temp.

    Good lad! I have to use two large gas barbecues at work when I the events but it's just not the same. Bought myself a barbecue today (old one went when wee moved), large coal version. Got some steaks, gammon, chops, chorizo burgers, plain quarter pounder and sausages. Told others that are coming round to bring done good too #greedy

    We use a Cadac gas thing when away in the van and it's definitely not as nice as a proper barbecue.

    Easy though. Great for bacon butties in the morning too.

    They were amazing big wow factor to the outlaws who were well impressed. The method I used worked a treat with the duck.
    BBQ was about an hour old.
    Carved into the skin and rubbed in a mix of black pepper, cumin and salt, blasted them skin down on the high heat for about 5mins turning often but mainly skindown.

    Right onto the back then so no direct heat some wood chips and herbs onto the coals and a sweet chilli sauce brushed on then lid on for 25 mins.
    Juicy and slightly pink in the middle.

    A mate of mine gets them from a butcher where his daughter has horse riding lessons. The two he got me this week were enough to feed 4 adults (with enough for a sarnie tomorrow!).

    Nothing wrong with horse meat. Having said that, I'd happily eat dog, cat, etc too. Only meat I wouldn't touch is human (obviously!)
