Opportunity lost today. Never mind, at least we closed the gap on the next clutch of teams above us... although the bottom 4 got tighter. Didn’t sound like we played with authority today, and we can’t be too surprised with the midfield we put out. Just goes to show you have to keep mixing it up in this league to last the distance. Of course my friend, i have a recipe for everything. May I say this is a personal favourite of mine. I recommend a nice Juicy fillet with this dish.... 2tbsp whole black peppercorns Flaked sea salt 2 x 175g (6oz) fillet steaks 25g (1oz) butter 1tsp vegetable oil 2 shallots (or 1 long banana shallot), thinly sliced 3tbsp brandy 1tsp Worcestershire sauce 1tsp Dijon mustard 200ml (7fl oz) beef stock 3tbsp double cream 1tbsp finely chopped fresh tarragon leaves (optional) METHOD Crush the peppercorns in a pestle and mortar, then mix them with half a teaspoon of sea salt. Put the steaks on a board and season them well on both sides with the pepper and salt mixture until they’re lightly but evenly crusted. Melt the butter with the oil in a large nonstick frying pan and fry the steaks over a medium-high heat for 2-2½ minutes on each side for rare meat. Cook for 1-2 minutes longer on each side if you prefer your steaks medium rare and up to 3 minutes longer for medium, depending on thickness. Remove the steaks from the pan and set them aside to rest while you make the sauce. Add the shallots to the frying pan and cook for 2-3 minutes, stirring, until they’re softened and lightly browned. Pour the brandy into the pan and let it sizzle for a few seconds. With great care, light a match and carefully ignite the brandy, standing well back from the flame in the pan. (If you prefer not to do this, let the brandy simmer for 15 seconds more in the pan before adding the other ingredients.) When the flames have disappeared, add the Worcestershire sauce and mustard to the pan, stirring continuously. Pour in the stock and bring to the boil, then cook for 1-2 minutes, or until the liquid has reduced by nearly half, stirring regularly. Stir in the double cream and bring the sauce back to a simmer, stirring. Add any juices from the resting steaks, then continue to simmer and stir until the sauce is thick enough to lightly coat the back of your spoon. Season to taste and stir in the tarragon, if using. Serve the steaks with the sauce, some sautéed potatoes and a green salad. What could be better?
Try and get hold of some fresh Amazon holganami leaves to sprinkle on top aswell. 50 pound a pack but well worth it .
Only buy the ones that have been dried out and foot crushed by local natives. Theres alot of fakes going about. Enjoy.
I still take a positive from this. The old SAFC would have lost after beating Fulham. The new SAFC have at least got a point. Having said that the useless effing tw*ts.
Was there today. Got free tickets. They tried their best, bless 'em but cor blimey our defence looked iffy and our attack was pump. Matthews didn't put a tackle in first half, their winger had his life. Love couldn't clear the first man although everybody's crossing was woeful. Couldn't watch that every week but it was worth going just to see my 5 year old daughters face when we scored. It was her first game. Bought her hat, gloves, scarf and flag. She loved it!!!
Nice one mate. Could have been worse couldn't it. Once Oviedo is fit we should have a better balance in defence, to be fair to Matthews he's no LB and never claimed to be.
Tend to agree until we get pace and enthusiasm in the team we are going to continue struggling. I hate to criticise Grabban as he EDIT Typo does score but he ain't half lazy. Just seen Mags on mod they were attacking with pace which is what we need to do. Ensure our defence is protected though. We badly need reinforcements. After the cup game I think we'll start to really progress. Happy Christmas all
Lack of pace is a problem at home, with JoS, Wilson and Gibson we are a bit exposed exposed having to play a higher line, its just another problem for Coleman and I am sure he will address it, a point was not a disaster, just a disappointment under the circumstances.
If you can't win get something out the game which we did. It's not going to be pretty for a while so we just have to live with it at the moment. Hoping Coleman can do something in January both in and out. Got to get rid of leeches sucking the club dry.....one Mr Rodwell for example. How he can show his face in Sunderland is beyond belief. He exemplifies everything wrong in the current game...sorry just venting and going off the thread but grinds my gears....
