    Yeah we used to eat mutton more than lamb tbh.

    In the late 70's and in the 80's all you got, as Muslims, was hens and mutton.

    Mutton?

    Try the Asian shops mate they have tonnes of mutton.

    I like mutton over lamb in curries and stews, but most people don't as it takes longer to cook

    Whole point of a stew is its slow cooked over a long period of time

    Most real Asian cuisine using meat includes bones.

    Problem is the butchers these days don't cut it properly. They just use them electric saw.things or hack at it with a chopper.

    Take chicken. As Asians we buy a whole chicken and joint it and cook it as a curry. But due to farming methods, steroids etc chicken bones are weaker these days

    butchers used to joint with a knife between the drumstick.and thigh. Now they just wack.it with a.big knife/chopper. This results in shattered bone so little bits breaking off in a stew or curry


    I can be starving and take a mouthful of chicken, get a bone shard and that's it, can't eat any more

    Doesn't ring a bell, I was at Prince Sultan in a ****ing tent, did customs and some dick was trying to smuggle in alcohol and the Saudi official caught him. I dealt with it and prevented it from escalating which was fun, the idiot then got to stay in my tent and I went to stay in the nice villa he was due to go to. The base was right on the outskirts of the city.

    Meat cooked on the bone is more flavourful. There is a lot of extra flavour in the bones. The problem is when the bone is all chopped to pieces and you can't take a bite without a bit of bone, that's what bothers me and goat seems to always be cooked like that around here. Tastes great, but never had goat meat without a bit of bone in each bite.


    Any meat cooked on the bone is going to taste better though.

    <laugh>. If you make it yourself and make it spicy it will be.

    There a few carribean restaurants around here. I like jerk, and when I've had it, it's always had a kick, but not as much as a hot asian curry. It will clear you sinuses but mild enough it won't trouble your anus coming out the other end.

    I'm lucky in that my grandad and dad always went to butchers and had meat done specifically. It "trained" me so to speak.

    If I go to a butchers I buy say a sheep shoulder I always ask.for the cartlidgey bone to be removed. And the rest to be done without hacking. They are happy to do it and the result is enough meat on and off bone to make a nice dish.

    Some people like to get mutton ribs to make a biryani/pillau with it. Its a bony, fatty meat that flavours the rice brilliantly. Its work eating it but mmmm

    I think the restaurant business has meant that non Asian people have been deprived of proper "savoury" rice. This is what we would call biryani or pillau. Moreso pillau.

    Its rice cooked in a huge pot with meat/veg/lentils and spices and its a meal in itself or accompanied with yoghurt or a watery curry.

    This kind of thing but I like the rice browner

    When we cook our Basmati at home we add whole bay leaves, sticks of cinnamon, nutmeg, etc...etc...etc. don't put meat or lentils in but it is very flavourful.

    Tastiest dish when made right. When I was a kid it would only get cooked on Eid or a wedding etc...now I have it quite often. Friday was the last time.
