Just made a couple of omelettes. Had to break some eggs, but well worth it. Might post up my tips for the perfect omelette when I have time. It's all about the pan really. And the eggs. And the technique, obviously. Had a neighbour who was a chef in the West End. He reckoned when you went for a job in a top restaurant or hotel, that's what they get you to cook, an omelette. Because anyone can cook one, but hardly anyone can do it well.
OK, next time I make stir fried pork with fresh green pepper corns, ginger and hot sweet red chillies I'll post it up with pictures.
Yeah I cook all of those Com but love a good green curry, I take it you dont like the small round green aubergines (makhuea)?
Try this one: Cold Chicken Curry 1 Medium Onion, chopped 2-3 tsp Curry Powder 2 tbsp Apriot Jam 4 tsp's Mayonaise 5fl oz Natural Yoghurt 2 tbsp Tomato Puree 6 oz Cooked Chicken Breast cut into bite sized peices Put onion, curry powder & jam in a pan & heat gently 3-4 minutes and leave to cool. Add mayonnaise, yoghurt & tomato puree and mix together. Add the chicken and add the chillis of your choice before serving.
Sweetness balances the heat, I suppose it's a variation of Coronation chicken but both are great in a baguette.
