I have lived there and the biggest issue with the 'respect the law' argument is that the Emirates are very selective about which laws they decide to pursue.... (unless in the more orthodox Sharjah, where laws have always been more strictly enforced.) Flagrant public sexual behaviour is one thing - but this scenario of two non-Muslims in a private relationship is just outrageous. As is the response of the South African Consulate to be honest - basically saying nothing to do with us!!
