There's no way i'd ever buy herring in a jar when the fish mongers are selling it fresh.

Some people just flash the steak about 10-15 seconds on both sides which leaves the middle bit still raw - yuck :emoticon-0132-envy:

On the other hand I have found if you overcook it it tends to go rubbery thats why I try to get a tuna steak thats the same thickness all the way through. I learnt my lesson when there was only the end bit left at the supermarket and it was in the shape of a small mountain I had hells tares trying to cook it <confused>

Don't ya like Sushi Bri? That's my favourite. Tuna and Salmon raw is lush.

I also like Tuna Carpaccio from my favourite local Italian restaurant.

I do mate, I love it, but as there's so much variety there's lots I love and lots I don't. I don't mind salmon raw, in fact it's the only way I like salmon, but I stay clear of seared fish, it's the way the textures mix, the ratio of raw to cooked isn't right for me, i'd rather just have it totally raw or cooked to no less than medium rare if tuna. I won't eat cooked salmon at all.
