Not BBQ but did my world class chilli yesterday.....has sat overnight to get the full flavour...now added the kidney beans and reheating..... Woooohooo....beer accompanying it of course...
Mince 1 onion chopped fine 2-3 garlic cloves minced 1 can of chopped tomatoes Half a tube of tomato paste 1/4 teaspoon of salt (or as much as you prefer) Half a teaspoon of ground black pepper 1 teaspoon of unsmoked paprika (or smoked if you prefer...i dont) 1 hot fresh chilli finely chopped seeds and all. 1 fresh green chilli chopped..deveined 1/2 teaspoon kashmiri chilli powder 1 tin of kidney beans 1/4 teaspoon of sugar if bitter (depends on the tomatoes) 1)Brown mince and drain...set mince aside 2)Soften garlic, chilli (fresh not the powder) &onions in same pan with veg oil 3)Turn heat up and add all spices except salt and fry for 30 seconds. 4)add mince and get it all coated with spices 5)add chopped tomatoes and paste 6)add a little boiling water intil you can only see liquid 7) cook on low heat until most of the sauce has disappeared/thickened then cover and switch off and leave until next day. 8) reheat, add kidney beans and let it go until they soften..add salt to preferred taste. You can play around with it...eg add dark beer instead of water, add more heat with dried chillies, dash of Worcestershire sauce etc...freshen it up with some skinned fresh tomatoes etc. I prefer mine basic though lol
I'd put both in personally and also add some mixed bbq chilli beans that you can get Also I think that recipe needs more flavour and wetness from like a couple of tablespoons of chilli sauce or sriracha sauce for example
I've played around adding hot sauces..some worked some didnt. Just don't reduce it as much if want it wetter. Flavour comes from the quality of the ingredients used to be sure ..ive done it with Asda mince and various own brand tinned tomatoes and its been bland.. Its why i love chilli...everyone has a recipe and most taste great! Went to chilli festival in belfast once...awesome day of music beer and 50 different types of chilli lol
